I have been reading allot of posts about sagging doors, both driver or
passenger sides.  This happened to my drivers door on my 95 GTI.  I took it
to the dealer about 3 times and all they did was an "adjustment" ( don't
ask me what they adjusted but it worked for about 2-3 weeks and the door
started to sag again.) to the door.  I then took my GTI to a body shop and
they informed me the hinge on these doors tend fatigue because of the heft
of the door, unlike the four door models.  What they did was shim the hinge
to bring the door up to original height.  I did this about 3 months ago and
I have had no problems since.  You may want to try this and see if it
works.  It only cost me one hour of labor and the brass shims.  BTW, you
can't see the shims so the hinge looks stock.

So I had some problems with the door on my '95 8v GTI sagging like the
Simpsons' house on bad foundations...the latch wasn't even going over the
striker without some help.  I got it fixed at the dealer body shop the
other day...the mechanic said the front gap (between door and fender) was
too small and the rear gap was too big, which meant the door was mounted
too far forward.  He moved it back, and now it seems to close nicely.
Unfortunately, adjusting the hinge means taking off the fender, so the
total cost was $136, but at least I have a door that closes nicely.

This theory also jives with the fact that, although the door was a little
low when I bought it (used), it really ran into problems when the wind blew
it open a little faster than I would have liked.

Anyway, problem solved.  Don't let them adjust the striker plate if the
door is sagging - that's what the guy at the dealer repair shop suggested
initially.  The bolts on mine were stripped already from previous
adjustments, which reflects the three mentions of "door adjustment" in the
car's service records.
